Pancakes are easy to make, combining three simple ingredients. They make a lovely snack, a slightly naughty meal or a dessert and are a great way to bring all the family to the table. They are enjoyed by all, even the very little ones in the family and I always have fond memories of everyone digging in to a big sharing pile and adding a squeeze of fresh lemon and far too much sugar! These days I tend to be cooking away trying to keep on top of the demand from hungry little mouths and I get to eat the ones inbetween that didnt quite make the grade from a failed flip ;) I prefer the thinner style of pancake as these are the ones my mum used to make when I was little though the little fat American style ones are equally good if desiring something a little different. There are many recipes and accompaniments though I always recomend to keep it simple. Do give our recipe a try and don’t forget to enjoy it in the process! Happy Shrove Tuesday!!!
Ingredients:
1 cup each of:
Free range Eggs
Full fat milk
Plain Flour
Method:
Blend your ingredients together until smooth
In a pre heated pan melt a little oil and butter
Pour your mix to completely cover the base of the pan
When the mix starts to set, release the edges with a spatula
Give the pan a little shake to ensure it’s ready to flip
Serve with your favourite accompanimnets

Butter gives a great flavour for your pancake though it can burn if cooking on a high temperatrure so add a little oil to rasie the smoking point
Use coconut oil for a vegan alternative
Always pre heat your pan
Pour your mix to desired thickness - swirl the pan to get the mix to spread to the edges
Don’t attempt to turn or flip too early
